I have been loving brie recently so I had to think of a way to make a brie pizza recipe and I couldn’t imagine a better pairing than brie, caramelized onions, and bacon jam. I mean, come on, these ingredients on their own are fire… put them together and you’ve got a masterpiece! Game changer.

There is no better time to make this recipe than right now! My mouth honestly starts to water once I hear the words “brie cheese”! This is a very simple, elevated way to make your own pizzas at home for pizza night!

Ingredients Needed
- Flatbread: I like to use Stonefire Artisan flatbread! I just love how it cooks and the texture of this crust.
- Butter: You can use either unsalted or salted butter, it doesn’t matter!
- White onion: I prefer how white onions taste when caramelized, you can also do yellow onions.
- Red wine vinegar: I believe that quality red wine vinegar can make all the difference! I once bought a cheaper red wine vinegar and honestly it ruined the dish.
- Granulated sugar: Brown sugar is also an option!
- Salt
- Brie cheese: I love brie cheese! You’ll need 8 ounces brie cheese for this recipe but you may be able to cut back a little on that.
- Bacon jam: Not all grocery stores will have bacon jam so it may take some looking to find one. You can also look on Amazon for a huge variety of bacon jams!
See recipe card for quantities.
Instructions

Prep the oven: Preheat the oven to 425 degrees F.
Make the caramelized onions: Heat 1 tablespoon of butter in a small skillet over medium heat. Add the onions. Cook onions for 10 minutes, stirring periodically. After 10 minutes stir in the red wine vinegar, granulated sugar, and salt and cook for about 5 minutes or until the liquid has evaporated. Remove the onions from the heat and transfer to a bowl to cool.

Add bacon jam and brie cheese: Place crust on a pan. Spread the bacon jam across the flatbread and sprinkle on the caramelized onions and Brie cheese.

Cook: Bake directly on the top oven rack for 6-8 minutes or until the Brie cheese has melted.

Cut the flatbread/pizza crust: Cut into 6 pieces and enjoy!

Storage
Cool it down: Let the pizza cool to room temperature before putting it in the fridge. This prevents condensation, which can make the crust soggy.
Wrap it up: Use plastic wrap, aluminum foil, or put the slices in an airtight container. This helps keep the pizza from drying out and prevents it from absorbing fridge odors.
Stack it smart: If you have multiple slices, you can stack them with a layer of wax paper or parchment paper between each slice to keep them from sticking together.
It is best to eat the pizza within 3-4 days for the best taste and safety.
When you're ready to eat, you can reheat the pizza in the oven or in a microwave. Enjoy!
Top tip
How to remove the brie rind: Lay the brie flat against the cutting board and use a serrated knife to cut along the edge of the brie to slice off the sides. Continue until you've completely removed the rind from the brie.
FAQ
