When I want a dinner that hits protein, carbs, and veggies all in one cozy, low-effort dish, a pasta bake is usually my answer. This Creamy Chicken Pasta Bake with Veggies is simple, comforting, and exactly the kind of meal that works with real life, not against it.

Corner of a white baking dish with creamy chicken and veggie pasta bake in it.

I love this chicken pasta bake recipe because it checks so many boxes: minimal prep, protein-packed, and loaded with convenient frozen veggies (aka the heroes of busy weeknight cooking). You know I’m all about getting as many nutrients as possible into one meal without spending hours in the kitchen, because who actually has time for that?

This one uses shortcut ingredients like frozen chicken nuggets and protein pasta, but still tastes like something you’d happily eat for leftovers all week.

This chicken vegetable casserole delivers protein for fullness, carbs for energy, fats for flavor, and veggies for fiber and micronutrients, all baked together into one easy family-friendly meal!

    Nutrition at a Glance

    • Protein: Thanks to protein pasta, chicken, and cheese, this chicken and vegetable pasta bake has plenty of protein to support muscle repair, satiety, and steady energy.
    • Carbs: Protein pasta and veggies provide fiber-rich carbs, which helps with digestion and blood sugar balance.
    • Healthy Fats: Goat cheese and olive oil contribute fats that help with nutrient absorption and satisfaction.
    • Micronutrient Boost: Frozen veggies add vitamins and minerals like vitamin A, vitamin C, and potassium with zero extra prep.

    Ingredients You Need

Ingredients needed to make chicken pasta bake with veggies.
    • Protein Pasta: Adds extra protein and fiber compared to traditional pasta. If you prefer using regular pasta, that is good too. Any shape works! Penne, rotini, or shells are great.
    • Frozen Breaded Chicken Nuggets: I use the Just Bare Chicken Nuggets which you can get at Costco. These are a convenient protein shortcut! Use lightly breaded or air-fried nuggets for best texture.
    • Goat Cheese: Makes the sauce creamy and tangy. Goat cheese melts beautifully and adds lots of flavor.
    • Shredded Mozzarella: For that bubbly, melty, cheesy top we all want in a pasta bake!
    • Frozen Veggies: Peas, carrots, corn, or a mixed blend all work. No chopping required.
    • Pasta Cooking Water or Milk: Helps bring everything together into a creamy sauce without making it heavy.
    • Olive Oil or Butter: Adds richness and helps the sauce coat the pasta evenly.
    • Garlic powder, salt, and pepper: Simple seasonings that go a long way.

    Dietary Substitutions

    • Gluten-free: Use gluten-free protein or chickpea pasta and gluten-free chicken nuggets.
    • Dairy-free: Swap goat cheese for a dairy-free cream cheese alternative and use dairy-free mozzarella shreds.
    • Vegetarian: Replace chicken nuggets with plant-based nuggets or roasted chickpeas.

How to Make Easy Chicken Pasta Bake with Veggies

Chicken nuggets cut into smaller pieces on a cutting board.

Step 1: Preheat the oven to 375°F. Bake or air fry the frozen chicken according to package directions. Let cool slightly, then chop into bite-size pieces.

Protein pasta and veggies together in a saucepan.

Step 2: Cook protein pasta in boiling water according to package directions. Add the frozen peas and carrots during the last 2 minutes of cooking. Reserve about 1 cup of the pasta water, then drain.

Pouring the chicken pasta bake ingredients into a baking dish.

Step 3: In a large bowl, combine the cooked pasta and veggies with the chicken. Add goat cheese crumbles, half of the mozzarella, a drizzle of olive oil and season with garlic powder, salt, and pepper. Stir gently, adding a splash of pasta water or milk to make everything creamy.

Assembled chicken and veggie pasta bake in a white baking dish before being baked.

Step 4: Transfer to a greased baking dish. Top with remaining mozzarella. Bake at 375°F for 15–20 minutes, until bubbly and lightly golden.

Step 5: Let it sit for a few minutes and enjoy!

    Dietitian Tips for Success

    • Don’t be shy with the veggies. Frozen broccoli, spinach, or even chopped bell peppers can boost fiber and micronutrients without adding much extra prep.
    • Use pasta water carefully. Starchy pasta water helps create a creamy sauce that coats everything evenly without needing heavy cream. Add it slowly, stirring between additions, so you can control the final texture. If you prefer, you can use milk instead!
    • Season a little more than you think you need. Pasta dishes tend to mellow out once baked, so tasting and adjusting seasoning before it goes into the oven is key!

    How to Serve It

This creamy chicken vegetable casserole is a complete meal on its own, but I love pairing it with something fresh and crunchy to balance it out. A winter arugula salad goes well with it in the colder months. A crunchy kale salad is another great option, offering extra fiber and texture! It would also go well with a bowl of soup on the side, like my roasted red pepper soup.

    Storage Suggestions

Refrigerator: Store any leftover chicken pasta bake in an airtight container for up to 4 days.

Freezer: This easy chicken pasta bake with veggies freezes beautifully, especially when portioned out individually. Freeze individual portions for up to 2 months.

Reheating: Microwave with a splash of milk or water, or reheat covered in the oven at 350°F until warmed through.
