How to Make Cookie Dough Energy Bites

Combine and mix: In a large bowl, mix everything together except the chocolate chips until well combined.

Add chocolate chips: Once the mixture is smooth, fold in the chocolate chips.

Roll: Roll into small, bite-sized balls and place them on a baking sheet lined with parchment paper.

Refrigerate: Pop them in the fridge for about an hour to firm up.
Store: Once they’re set, transfer to a container and store in the fridge until you’re ready to snack!
Hint: You can make your own oat flour by adding rolled oats to a food processor and blend for about 30-35 seconds!
Variations
Nut butter swap – Use peanut butter, almond butter, or cashew butter instead of sunbutter for a different flavor twist.
No protein powder? – Sub in extra oat flour or finely ground oats to keep the texture right.
Add-ins – Toss in shredded coconut, chopped nuts, chia seeds, or dried fruit for more texture and flavor.
Chocolate lovers – Mix in cocoa powder or use chocolate protein powder for a brownie-like vibe.
Spice it up – A pinch of cinnamon or pumpkin spice gives them a cozy flavor boost.
Make it festive – Add crushed peppermint, sprinkles, or seasonal mix-ins for a holiday version.

Nutrition
These Cookie Dough Energy Bites are the perfect little snack when you want something that feels like a treat but also gives you a bit of a boost. They’ve got a balance of carbs, healthy fats, and protein to help keep you satisfied between meals. The protein powder adds a bit more staying power, while the flaxseed brings in some fiber and omega-3s. Plus, they’re sweetened naturally with maple syrup—no need for refined sugar here. Great for on-the-go snacking, lunchboxes, or a quick bite before (or after) a workout.
Storage
You can store these Cookie Dough Energy Bites in an airtight container in the fridge for up to a week. If you want to keep them longer, they freeze well too—just pop them in a freezer-safe container or bag and they’ll keep for a couple of months. When you're ready to eat, just let them sit at room temp for a few minutes to soften up a bit.
Make Your Own Oat Flour for These Little Bites
Start with rolled oats – Use old-fashioned or quick oats (just not steel-cut—they’re too hard to blend smoothly).
Add to a blender or food processor – Pour the oats into your blender or processor.
Blend until fine – Pulse or blend on high until the oats turn into a fine, flour-like texture. This usually takes 30–60 seconds.
Check the texture – Rub a bit between your fingers—if it still feels coarse, blend a little longer.
Store it – Transfer to an airtight container and store in a cool, dry place for up to a few months.
Top tip
For this cookie dough bites recipe, lightly wet your hands before rolling the mixture into bites—it helps keep the dough from sticking to your fingers and makes shaping them way easier!
FAQ
Yes! These energy bites are made with oat flour which is safe to eat raw. Raw wheat flour isn’t safe to eat because it can sometimes be contaminated with harmful bacteria like E. coli or Salmonella. Even though we usually think of flour as dry and harmless, it hasn’t been treated to kill bacteria the way milk or eggs might be. These bacteria can survive in flour for a long time and cause foodborne illness if eaten raw.
