This dish was inspired by your classic Chipotle bowl! It is so easy and customizable so everyone in the family will love it. Let’s make this homemade burrito bowl!

Ingredients

- Ground chicken - You could also use shredded chicken breasts.
- Taco seasoning - I use ½ a packet when cooking 1 pound of ground meat, the whole packet is too much flavor in my opinion!
- Bell pepper - I like orange and yellow bell peppers the best but you can use any color you like.
- Red onion - You only need ½ of a red onion unless you REALLY like red onions!
- Avocado - I like to dice my avocado but to save time you could also buy store-bought guacamole.
- Black beans - Look for low-sodium or no-salt-added canned black beans!
- Corn - You can definitely use fresh, frozen, or canned corn. I chose to use no-salt-added canned corn.
- Green chilis - I used canned for these!
- Mexican cheese - Shredded cheddar cheese would work too.
- Microwavable brown rice - I like to use these because they save time and they are low in sodium!
- Sour cream - For the topping.
- Cilantro - I use fresh cilantro for a topping!

Instructions for Chicken Mexican Rice Bowls Recipe
Cook the ground chicken: Add the ground chicken and avocado oil to a large skillet and cook until cooked thoroughly over medium heat. Once the ground chicken is cooked, add ½ the taco seasoning packet and stir until well mixed. Add some water if the meat seems too dry.
Prep the remaining ingredients: While the chicken is cooking, start prepping the other ingredients. Dice the bell pepper, red onion, and avocado, drain the black beans, corn, and green chilis, and chop the fresh cilantro.
Make the rice: Microwave the microwavable brown rice according to the package instructions.
Assemble the bowls: Once everything is prepared, assemble the bowls starting with the rice and chicken, and add the rest of the toppings to your preference. Enjoy!
Hint: If the chicken gets too dry, try adding a few tablespoons of water to moisten it!
Substitutions
Rice - You could cook regular brown rice, add more flavor with cilantro lime rice, or white rice if you like to keep it simple.
Vegetarian - Simply omit the ground chicken and add another can of black beans or pinto beans for added protein.
Ground chicken - Instead of ground chicken for the taco meat, you could do ground beef, ground turkey, or shrimp.
Equipment

Storage
I like to store each ingredient in separate containers and assemble it when I am ready to eat. Unless you are meal-prepping for lunches during the week, then you could put all the ingredients into one airtight container except the avocado! I like to separate that and add it to my dish after microwaving.
I recommend consuming within 3-4 days of storing in the refrigerator.

To cut back on sodium, you could make a homemade taco seasoning from the Cooking Up Memories blog. It uses spices like chili powder, cumin, and garlic powder.

Great toppings could include: green onion, lime zest, fresh lime juice, pico de gallo, corn chips, tortilla strips, or any fresh vegetables!
The ingredients that I recommend do create a healthy Mexican rice bowl! You don’t necessarily have to swap out the canned ingredients for fresh ingredients as the only concern with canned is the sodium in it. But by buying no-salt-added canned goods, it still makes it a healthy meal and a little more convenient! Just like with any recipe, the ingredients you choose can either make it healthier or less healthy for you. As a reminder, every single meal or snack does not have to be healthy, I recommend choosing mostly healthy foods the majority of the time but I also love to indulge!
