I love a good savory chicken salad recipe! I have never been a huge fan of sweet chicken salad and I wanted to get creative with my recipe. So here we have it, a dill pickle chicken salad. Add some fresh dill, your favorite dill pickles, and some crisp celery and you have created a masterpiece. This is a great way to make your classic chicken salad recipe a lot more elevated with simple ingredients!

Was this inspired by anything in particular? Well yes, it was. My love for dill pickles haha! It is also an easy recipe that can be made in a big batch for lunches during the week. Leftovers hold up well so if you are a Sunday meal prepper, you can absolutely add this to your rotation!

Ingredients

- Chicken - I use boneless, skinless chicken breasts and cook them in the crockpot! Use my shredded chicken recipe to do the same.
- Celery - Sometimes I don’t like celery in my chicken salad but it adds the perfect crunch in this recipe!
- Dill pickles - Choose your favorite brand of dill pickles, I used Grillo’s Pickle Spears.
- Plain Greek yogurt - The majority of the sauce is Greek yogurt-based!
- Mayo - I did add some mayo to the sauce for the classic chicken salad taste.
- Dill pickle juice - I added pickle juice for extra flavor and moisture.
- Dill - Fresh dill is preferred but you can always sub for dried dill.
- Lemon - Lemon adds some extra zing to this salad!
- Red pepper flakes - I love adding red pepper flakes to add spice! Omit if you do not like spicy.

Substitutions/Variations
Make it sweet - Add green grapes or red grapes for some sweetness!
Add other ingredients - I have said it once and I will say it again, recipes are used as a guide! I love making recipes my own and I encourage all of you to do so as well. Other fun additions would be red onion, green onions, other fresh herbs (like fresh rosemary or fresh parsley), celery seed, poppy seed, garlic powder, dijon mustard, or anything else that sounds good to you!
Want to eat Keto Chicken Salad? The chicken salad itself is considered keto, but instead of using crackers or bread, you could put it on a bed of greens/bed of lettuce or do lettuce wraps!
Nutrition
I love using Greek yogurt to increase the protein. It is just in me as a Dietitian! In this recipe, there is a mix of plain Greek yogurt and mayo. If you want to replace the mayo with plain Greek yogurt, you will increase the protein even more!
Chicken is also a great, lean protein source! I hate plain chicken so I am always looking for ways to get creative!
Gluten-free alternatives: no alternatives needed!
Dairy-free alternatives: replace the Greek yogurt with coconut, soy, or almond milk yogurt.
Storage
Store the leftover chicken salad in an airtight container in the refrigerator for 3-5 days.
