Believe me when I say I understand how crazy weekday mornings can be. Between getting both boys up, dressed, fed, and out the door (also while trying to get lunches packed and dogs to go to the bathroom and also fed) I feel like I am in chaos for the first few hours of my day. Egg bites are a great recipe to make ahead of time for those busy mornings. This recipe is also very kid-friendly, my boys can attest to that! Read on to find out how to make this breakfast a balanced meal, find the recipe, and how to store egg bites.
Nutritional Benefits
As a dietitian, I still hear a lot of people say how afraid of eggs they are. This is your permission from a health professional to eat the dang eggs! They are a nutrient-dense protein that happen to be tasty as well!
Protein - They are a great choice of protein and egg bites in the morning are a great way to start your day off strong. Babies and toddlers also tend to be picky about their proteins but I usually have success with eggs!
Nutrient-Rich - One of the best sources of choline which is essential for brain health! Eggs are also rich in B vitamins.

Ways to Make a Balanced Meal
A simple way to make your plate more balanced would be to simply add a side of fruit! Your egg bites have plenty of protein, some veggies, and some fat. My favorite fruits in the mornings are strawberries, blueberries, or bananas.
Another excellent addition would be a slice of whole wheat bread with jam or peanut butter!
How to Store Egg Bites
Egg bites are a fantastic breakfast or snack you can meal prep and keeping them fresh is pretty simple! Let's learn how to store egg bites.
1. Let Them Cool:
After whipping up a batch of these homemade egg bites, give them 10-15 minutes to cool down. By placing them on a wire rack, they will cool off faster.
2. Pick Your Container:
Choose a storage container - tupperware, glass containers, or a ziploc bag will do. You want to be sure that they are in an airtight container to preserve their freshness!
3. Layer with Parchment:
If you're stacking your egg bites, layer them with parchment paper to prevent sticking. This way, they won't cling together.
4. Fridge or Freezer:
For short-term storage, pop them in the fridge in an airtight container.
If you want to freeze them for future use, I recommend wrapping them individually in aluminum foil or plastic wrap (or both) and placing them in a freezer ziploc bag to prevent freezer burn.
5. Reheating:
Simply place them in the microwave to reheat for 1-2 minutes. If you are pulling from the freezer, I recommend microwaving for about 2-3 minutes at 50% power.

Variations/Substitutes
Egg whites - Instead of using the whole egg, you can use just egg whites if that is your preference!
Add in more veggies - Bell peppers like green peppers or red peppers, cherry tomatoes, green onion, or even asparagus would taste AMAZING in this recipe!
Change up the cheese - Try parmesan cheese, cheddar cheese, monterey jack cheese, or give cottage cheese a try!
Add some heat - I love a good spicy recipe if you haven’t noticed by now lol! Hot sauce or red pepper flakes would both be an excellent choice.
