Ingredients Needed
Use a clear shot of the ingredients for this recipe, prepped, and labeled if necessary. Add a paragraph of content describing why these ingredients were chosen. Insert the ingredients into the list below, omitting quantities.

- Red onion - Red onions give a pop of color and is not as strong of an onion taste like white or yellow onions.
- Cucumber - I prefer to use English or Persian cucumbers versus field cucumbers because they hold up better in a dressing and is more crunchy in my opinion.
- Cherry tomatoes - I choose to do cherry tomatoes or even grape tomatoes because of my taste preferences.
- Feta cheese - Be sure to get blocked feta cheese so you can cut it up yourself into cubes instead of crumbled feta.
See recipe card for quantities.
How to Make Healthy Greek Salad Skewers
Prep the vegetables: Dice red onion into medium to large dice and add to a medium-sized bowl. Cut the cucumber into 8 1-inch slices and then slice into quarters so you have 32 slices. Add to the bowl. Add 32 cherry tomatoes to the bowl.
Cube the feta cheese: Slice the feta cheese into 4 rows and 4 columns, this makes 16 pieces. Cut each piece in half to make 32 cubes.
Make the Greek salad dressing: Add all the dressing ingredients into a mason jar and mix very well. Add ½ cup of the dressing to the bowl, toss, and let it marinate in the fridge for about 30 minutes.
Make the skewer: After it is done marinating, start to layer the veggies and the cheese last onto a small bamboo skewer. By placing the cheese last, it can stand on the serving platter. Repeat with the rest of the skewers.
A traditional Greek salad includes sliced cucumbers, tomatoes, red onions, kalamata olives, bell peppers, and feta cheese.
Substitutions/Variations
Gluten-free: This recipe uses all gluten-free ingredients.
Make it vegan: The only ingredient you have to change to make it vegan is the feta cheese! There are vegan feta cheese options out there if you choose to replace it. This is a vegetarian Greek vegetable side dish!
