Are you wanting to make some festive cookies but not wanting to make homemade cookie dough? The good news is that I have an ice cream sandwich recipe for you using store-bought cookie dough! You do not have to worry about those complicated cookie recipes. We will go over your burning question “how long does sugar cookie dough last in the refrigerator?” and other tips for this recipe!

    Storing

Unopened Package: If it's still sealed, you can keep the raw cookie dough in the fridge until the expiration date mentioned on the package. Usually, it's a few weeks, but check for specifics.

Opened Package: Once opened, the best way to store the cookie dough in an airtight container or cover it with plastic wrap. This helps prevent it from drying out. Use it within 3-5 days or as recommended on the packaging for best results.

Freezer Option: If you're not planning to use it all within the recommended time, the best option is to toss it in the freezer. Just make sure it's in a freezer-safe bag or container to prevent freezer burn. It can stay good for a few months in the freezer.

Room Temperature Concerns: Avoid leaving the dough at room temperature for too long, especially if it contains perishable ingredients like raw eggs. It could lead to unwanted bacterial growth and food poisoning.

How to Make Holiday Sugar Cookie Ice Cream Sandwiches

Bake Cookies: Place cookies in a single layer on the baking sheet. Bake Pillsbury sugar cookies according to package instructions. The bake time will be listed on the package.

Cool: Let the fresh-baked cookies cool off for a little bit (about 30 minutes).

Soften Ice Cream: Set vanilla ice cream out on the counter for 1-2 minutes to soften slightly. This will make it easier to assemble the cookies.

Assemble: Add one scoop of ice cream (about ⅓ cup) between two cookies. Gently press cookies together until ice cream spreads to the edges of the cookies.

Transfer to Freezer: Transfer the cookie ice cream sandwiches onto a cookie sheet with parchment paper in the freezer as you make them to prevent the ice cream from melting.

Eat or Store: Eat immediately or store in the freezer. To store - wrap each sandwich individually in plastic wrap and place it in a resealable freezer bag.

    Variations/Substitutes

Add red and green sprinkles - place sprinkles in a shallow bowl and roll the sides of the cookies with ice cream in the sprinkles.

Change up the ice cream - peanut butter ice cream

Use a different type of cookie - chocolate chip cookie dough would be amazing or if you wanted to do this at a different time of year you can do undecorated sugar cookies.

Make homemade dough - use one of your favorite homemade cookie recipes and throw ice cream in between two cookies! The type of dough is up to you!
