As the leaves turn and the air becomes crisp, it’s the perfect time to indulge in all the comforting flavors of fall. These Protein Pumpkin Donuts are a delightful way to celebrate the season while nourishing your body. With each bite, you’ll experience a warm blend of spices, the natural sweetness of pumpkin, and a satisfying dose of protein that will keep you energized throughout the day.

As a Dietitian, I am always looking for ways to serve my kiddos a healthier diet. We have been recently getting donuts from a local donut shop on the weekends, and while I totally support this on occasion, I couldn’t serve these donuts to them throughout the week. So I decided to make a recipe I felt good feeding them!

But these donuts aren’t just about taste and nutrition—they're also incredibly easy to make! Whether you're whipping them up for breakfast, a snack, or a cozy dessert, they’re the ideal treat for any occasion.

    Ingredients

    • Whole Wheat Flour – A healthier alternative to white flour, whole wheat flour adds fiber and nutrients while giving the donuts a hearty texture.
    • Vanilla Protein Powder – Packed with protein, this powder enhances the nutritional value of the donuts and adds a subtle vanilla flavor.
    • Granulated Sugar – Provides sweetness and helps create that deliciously soft texture, balancing the earthy flavors of the pumpkin.
    • Eggs – Essential for binding the ingredients together, eggs also add moisture and contribute to the donuts' fluffiness.
    • Vanilla Extract – A splash of vanilla extract adds a warm, sweet aroma and flavor that complements the other ingredients beautifully.
    • Pumpkin Puree – The star of the show! Pumpkin puree adds moisture, natural sweetness, and a rich, earthy flavor, plus a boost of fiber and vitamins.
    • Cinnamon – This warm spice enhances the flavor profile of the donuts, adding depth and a cozy aroma that’s perfect for fall.
    • Pumpkin Pie Spice – A blend of spices like nutmeg, ginger, and allspice, pumpkin pie spice brings that classic fall flavor, elevating the overall taste of the donuts.

How to Make Protein Pumpkin Donuts

Prep the oven: Preheat your oven to 350°F and lightly coat a donut pan with nonstick spray.

Mix the wet ingredients: In a large mixing bowl, combine all the wet ingredients and use a handheld mixer to blend until smooth.

Add the dry ingredients: Gradually add the dry ingredients to the bowl and mix until everything is well combined.

Add batter to the donut molds: Spoon the batter into the donut molds and bake for 11-14 minutes.

Make the cinnamon sugar: While the donuts are in the oven, mix the sugar and cinnamon together in a shallow bowl.

Top the donuts: Once the donuts are finished baking, brush the tops lightly with water, then dip them into the cinnamon sugar mixture.

Enjoy: Serve and enjoy your delicious donuts!

Hint: You don’t have to make mini donuts, you can also make about 5-6 regular sized donuts if you don’t have a mini donut mold!

    Variations

Butter: Instead of using water on top of the donut, you could swap it with melted butter for a richer taste!

Chocolate Chips: Mix in some dark chocolate or white chocolate chips for a sweet surprise in each bite.

Spiced Nuts: Fold in chopped pecans or walnuts for added texture and a nutty flavor. You can also toast them for extra crunch.

Protein Powder Flavor: Experiment with different flavored protein powders, like chocolate or caramel, to change up the taste profile.

Chai Spice: Substitute pumpkin pie spice with chai spice for a different flavor profile that’s still cozy and warm.

    Nutrition

These baked protein donuts are healthier than fried donuts because you are not immersing the donuts in fat. There is nothing wrong with fried donuts but if you are looking to cut back on fat intake and eat more heart-healthy, baked is the way to go!

These donuts help increase your daily protein intake by adding in the protein powder.

    Storage

To keep your protein pumpkin donuts fresh and tasty, follow these storage tips:

Thawing: When you’re ready to enjoy the frozen donuts, simply remove them from the freezer and let them thaw at room temperature for a couple of hours, or heat them in the microwave for a few seconds for a fresh-out-of-the-oven feel.

Cool Completely: Allow the donuts to cool completely at room temperature before storing them. This prevents moisture buildup and helps maintain their texture.

Room Temperature: If you plan to eat the donuts within a day or two, store them in an airtight container at room temperature. This will keep them soft and delicious.

Refrigerate: For longer storage, place the donuts in an airtight container and store them in the refrigerator. They should stay fresh for up to a week.

Freeze: If you want to keep them for an extended period, freeze the donuts. Wrap each donut individually in plastic wrap or foil, then place them in a freezer-safe bag or container. They can be stored in the freezer for up to 2-3 months.

    Top tip

Make sure to get the top of the donut wet with water, otherwise the cinnamon sugar won't stick!

    FAQ

    Are protein donuts really healthy?

It depends. These protein donuts are generally healthy because of the whole wheat flour and limited saturated fat. I chose to bake these donuts rather than fry them.

How do you make donuts healthier?

You can make simple swaps to increase the nutrition in a donut. First, try baking your donuts rather than frying them. Next, add some protein powder to make each donut more filling. My last tip is to use whole wheat flour instead of white all-purpose flour.
