Fresh, flavorful meals don’t have to be complicated, and this Southwest Chicken Salad is a perfect example! It’s packed with protein, loaded with colorful veggies, and tossed in a creamy dressing that feels indulgent while still supporting balanced eating.

I was inspired to make this southwest chicken salad after having a few friends over for a laid-back grill night last weekend. One of my friends brought a southwest chicken salad that was honestly one of the best things I’ve ever tasted. I couldn’t stop thinking about it, so I knew I had to recreate a version to share with you.
I chose to make this recipe with Greek yogurt instead of mayo because I’m really trying to prioritize balance when it comes to nutrition (without sacrificing flavor!). Between raising two little kids, growing my business, caring for five pets, traveling, and still trying to maintain a social life, nutrition can easily fall to the bottom of the list.
If you’re in a similar season, this Southwest chicken salad recipe is a reminder that doing your best is enough, and that simple, nourishing meals can still taste amazing!
Nutrition at a Glance
- Protein: Thanks to shredded chicken and Greek yogurt, this salad helps keep you full, supports muscle maintenance, and stabilizes blood sugar.
- Fiber: Black beans, corn, and veggies provide fiber for digestion, gut health, and sustained energy.
- Lower in Saturated Fat: Using Greek yogurt instead of mayo keeps things creamy while supporting heart health.
- Micronutrients: Bell peppers, cilantro, and lime juice contribute vitamin C and antioxidants that support immune health!
Ingredients You Need

- Shredded Chicken: A great lean protein! Rotisserie chicken works perfectly here for convenience, or you can make homemade shredded chicken.
- Sweet Corn: Adds natural sweetness and fiber! Fresh, frozen (thawed), or canned all work.
- Black Beans: Boost fiber and plant-based protein. Pinto beans are a great substitute.
- Red Onion: Adds crunch and sharp flavor! Soak briefly in water if you prefer a milder taste.
- Red Bell Pepper: Brings color, crunch, and vitamin C. You can use any color of bell pepper that you have on hand.
- Fresh Cilantro: Adds brightness! Feel free to substitute parsley if cilantro isn’t your thing.
- Greek Yogurt: Creates a creamy base with added protein. Make sure to use plain, unsweetened yogurt.
- Lime Juice: Adds acidity and freshness! Lemon juice works in a pinch.
- Taco Seasoning: This is an easy way to add classic southwest flavor. Homemade or store-bought both work. I recommend using low sodium so that you don’t add too much salt.
- Garlic Powder: Adds savory depth without overpowering the dressing!
Dietary Substitutions
- Gluten-Free: Naturally gluten-free as written. Just serve with gluten-free bread or chips if needed.
- Dairy-Free: Use a dairy-free plain yogurt (such as coconut or almond-based) or mashed avocado for creaminess.
- Vegetarian/Vegan: Replace chicken with chickpeas, or a mix of beans and roasted sweet potatoes and use plant-based yogurt.
How to Make Easy Southwest Chicken Salad

Dietitian Tips for Success
- If you’re short on time, using rotisserie chicken is a great time saver and helps get a balanced meal on the table faster. Choose plain or lightly seasoned chicken to keep the flavors from overpowering the dressing.
- Adding extra vegetables like diced cucumber or shredded romaine can increase volume while also adding extra nutrients. This is a helpful strategy if you want a more filling portion with more fiber!
- Pairing this salad with a whole-grain bread or high-fiber crackers helps create a more balanced meal. Combining protein, fiber, and carbohydrates makes this a full, satisfying meal!
How to Serve Southwest Shredded Chicken Salad
This Southwestern chicken salad is so versatile! Serve it as a Southwest chicken salad sandwich on toasted bread, or stuff it into wraps or pita pockets. You can also spoon it over mixed greens, or enjoy it with tortilla chips or crackers as a dip-style salad, which is my personal favorite way to eat it.

Storage Suggestions
Store leftover southwest chicken salad in an airtight container in the refrigerator for up to 3 to 4 days. Stir before serving. This recipe is not ideal for freezing due to the yogurt-based dressing, which can separate once thawed!

I just made this recipe the other day and it was delicious. I made a couple of variations to the recipe that I will share. First, it needed more taco seasoning and salt for my taste. I also added pickled jalapenos and the juice to the mix. This gave it a nice bit of heat and tang. I would make this again! Thanks again for sharing this recipe. :)
