If you’ve ever wished you could sneak a little extra nutrition into your family’s day without a single complaint… these Spinach Banana Muffins are about to be your new best friend. They’re naturally sweet, super soft, and yes, bright green, but somehow still totally kid-approved (trust me on this one!). All 3 of my boys will devour a pan of these in one morning, so I have proof!

As someone who’s always looking for ways to make nourishing food feel fun and approachable, I love recipes like this. These muffins are packed with wholesome ingredients, come together in a blender (hello, easy cleanup!), and taste like a treat while still having real nutrition.

These muffins are quick, freezer-friendly, naturally sweetened, and full of ingredients that actually support your body. And if you’re feeding kids? It’s a win when something this nutritious feels like a little treat.

    Nutrition at a Glance

    • Fiber: Supports digestion and helps keep you full longer, making these great for sustained energy.
    • Healthy fats: Important for brain health and keeping you satisfied between meals.
    • Plant-based protein: The oats and hemp hearts help support muscle repair and growth, especially important for growing kids.
    • Iron: Essential for energy levels and oxygen transport in the body.
    • Potassium: Supports heart health and helps regulate fluid balance.

    Ingredients You Need

Ingredients needed to make spinach banana muffins.
    • Bananas: Naturally sweet and help keep the muffins moist. The riper, the better for flavor!
    • Baby Spinach: Adds nutrients like iron and fiber with a very mild flavor. Perfect for sneaking in veggies!
    • Egg: Provides structure and a boost of protein.
    • Vanilla Extract: For added depth of flavor.
    • Pure Maple Syrup: As a natural sweetener!
    • Avocado Oil: A neutral oil that adds healthy fats and keeps the muffins soft. You can also use melted coconut oil.
    • Hemp Hearts: A small but mighty ingredient packed with protein and omega-3s. You can substitute chia seeds or flaxseed.
    • Rolled Oats: The base of the muffins, providing fiber and a hearty texture.
    • Baking Powder & Baking Soda: Help the muffins rise and stay fluffy.
    • Salt: To balance the flavors!
    • Mini Chocolate Chips: Add a touch of sweetness and make these especially kid-friendly.

    Dietary Substitutions

    • Gluten-free: This recipe is naturally gluten-free if you use certified gluten-free oats.
    • Dairy-free: Already dairy-free as written, just double-check your chocolate chips if needed.
    • Vegetarian: This recipe is vegetarian as written.
    • Vegan: Swap the egg for a flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water, let sit for 5 minutes).

How to Make Blender Spinach Banana Muffins

Step 1: Preheat your oven to 350°F and line a muffin tin. Add bananas, spinach, egg, vanilla, maple syrup, avocado oil, and hemp hearts to a blender. Blend until completely smooth. Add the oats, baking powder, baking soda, and salt to the blender. Blend again.

Step 2: Stir in the mini chocolate chips. Pour the batter evenly into the muffin cups, filling each about ¾ full.

Step 3: Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Let cool for a few minutes before removing from the pan, then enjoy!

    Dietitian Tips for Success

    • Use very ripe bananas for best flavor. The riper your bananas, the sweeter your muffins will be without needing extra sugar. This also improves the texture, making the muffins softer.
    • Blend thoroughly for a smoother texture! Take an extra minute to fully blend the spinach and oats. This helps eliminate any leafy texture!
    • Don’t skip the healthy fats. The avocado oil and hemp hearts aren’t just for nutrition, they also help keep the muffins moist and satisfying. Without enough fat, the muffins can turn out dry and less filling.
    • Make them ahead for busy days! These blender spinach banana muffins are perfect for meal prep. Having a batch ready to go makes it easier to choose a nourishing option when you’re short on time.
    • Customize for your needs! You can easily boost the protein by mixing in a scoop of your favorite protein powder. This is especially helpful if you’re using these as a more substantial breakfast!

    How to Serve It

These spinach banana muffins are perfect warm straight from the oven, but they’re just as good at room temperature for an easy grab-and-go option.

    Serve them alongside:

    • Kiwi Blackberry Smoothie
    • Tofu Breakfast Scramble
    • Yogurt and fruit

They also make a great lunchbox addition or afternoon snack, especially with a little extra smear of nut butter on top!

    Storage Suggestions

    • Room temperature: Store in an airtight container for up to 2 days.
    • Refrigerator: Keep in the fridge for up to 5 days for longer freshness.
    • Freezer: Freeze in a sealed bag or container for up to 3 months.
    • Reheating: Microwave for about 20–30 seconds or let thaw at room temperature.

    Frequently Asked Questions

    Can you taste the spinach?

Not really! The banana, vanilla, and chocolate chips do a great job of masking the flavor, so most people (including kids) won’t even notice it’s there.

Can I make these without a blender?

A blender or food processor is highly recommended to get the smooth texture and fully incorporate the spinach. If you don’t have one, you could try using oat flour and very finely chopping the spinach, but the texture will be different.

Are these good for toddlers and kids?

Absolutely! These muffins are soft, naturally sweetened, and packed with nutrients, making them a great option for little ones. Just be mindful of chocolate chip amounts if you’re limiting added sugar.

    Can I use frozen spinach?

Yes, but thaw it first and squeeze out as much excess moisture as possible. Too much water can affect the texture of the muffins.
