    Trader Joe's Chicken Shawarma Bowls

    This Trader Joe’s chicken shawarma recipe is unbeatable! It’s an easy weeknight sheet pan dinner that's both nutritious and delicious. As a dietitian, I’m always looking for ways to add more nutrients to meals, and this one’s packed with goodness.

    This flavorful meal is perfect for novice cooks. Just toss a few ingredients together and you’re good to go!

    You’ve probably seen those viral TikTok videos on how to use Trader Joe’s Chicken Shawarma. Now it’s your turn to try my all-new chicken shawarma bowls! This protein-rich meal, featuring chicken and hummus, is sure to become a favorite.

    Ingredients

    • Trader Joe’s Chicken Shawarma Thighs - It is so nice so have marinated chicken ready to go!
    • Cauliflower - You can either do a head of cauliflower and chop it or buy pre-cut cauliflower for ease.
    • Cucumber - I love to use cocktail cucumbers or English cucumbers.
    • Wild rice - I purchase the microwavable wild rice from Target but you can also make your own on the stove!
    • Hummus - Pick your favorite hummus to put on top of your bowl!

    Instructions

    Preheat oven: Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.

    Prep the cauliflower: On a cutting board, cut the cauliflower into bite-sized florets and toss with olive oil, salt, and pepper.

    Bake the cauliflower and chicken shawarma thighs: Place the chicken thighs on the baking sheet in a single layer and place the cauliflower around the chicken thighs on the baking sheet. Roast until cooked through, about 20-25 minutes. Be sure to check the internal temperature with a meat thermometer. The internal temp of chicken should be 165 F degrees.

    Cool: Let the chicken cool slightly.

    Make the wild rice: Microwave the rice according to the package instructions.

    Prep the cucumbers: Slice the cucumber.

    Build your bowl: Build your bowl with the rice, chicken, and cauliflower, and top with your favorite hummus. Enjoy!

    Hint: Want to make air fryer chicken shawarma? Throw the marinated chicken into the air fryer basket and cook at 400 degrees for 18-20 minutes!

    Substitutions/Variations

    Variations 

    Don’t like wild rice? Give brown rice, basmati rice, or cauliflower rice (a low carb option) a try instead!

    Want to add more nutrition to the bowl? Add halved cherry tomatoes, feta cheese, and/or red onion to it!

    Substitutions

    Everything is gluten-free and dairy-free in this recipe!

    Protein-rich: This recipe is packed with protein from the chicken and hummus!

    Full of vitamins and minerals: It is no secret that vegetables give us a lot of nutrients! Bowls are a great way to pack in those veggies for the added nutrition.

    Fiber: My Trader Joe’s chicken shawarma recipe also has a lot of fiber from wild rice, veggies, and hummus!

    Storage

    Store in an air-tight container in the refrigerator for 3-4 days!

    I prefer to store all my ingredients separately and then assemble before eating.

    Top tip

    The chicken lets off a lot of juice while cooking so you really don’t need to season your cauliflower very much. When you put the cauliflower on the same pan as the chicken, the cauliflower will soak up a lot of the flavor!

    • 1 medium cauliflower chopped into bite-size pieces
    • ½ cup cucumber slices
    • extra-virgin olive oil for drizzling
    • sea salt and pepper
    • 1 package microwavable wild rice
    • hummus for topping
