Ingredients

  • 5 cups cubed whole wheat bread about 9 slices
  • 1 cup mixed berries fresh or frozen
  • 4 large eggs
  • 1 cup milk
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 pinch salt

Instructions

  • Preheat the oven to 350°F and grease a 12-cup muffin tin well.
  • In a large bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon, and salt until smooth.
  • Add the bread cubes and toss to coat, then let them soak for a few minutes so they soak up the custard.
  • Gently fold in the berries, trying not to crush them.
  • Divide the mixture evenly among the muffin cups, pressing down gently and spooning any leftover custard over the top.
  • Bake until set in the center and golden on the edges, about 30 minutes.
  • Let cool in the pan for a few minutes before lifting out. Serve warm with a little extra pure maple syrup.
