Berry french toast cups are one of those breakfasts that feel like a treat and still leave you feeling good about what you served your family. As a dietitian and a mom, I am always looking for recipes that deliver protein, fiber, and real flavor without taking forever to make. These do all of that and then some!

Two berry French toast cups on a white plate, with a muffin tin of more French toast cups behind them on a wooden board.

The custard soaks right into the whole wheat bread, the berries get jammy and sweet during baking, and the maple syrup ties everything together beautifully. Each cup is its own little serving, which makes them so easy to grab and go or sit down and enjoy.

For another breakfast I come back to again and again, my cottage cheese banana pancakes are just as simple and just as satisfying!

    Nutrition at a Glance

    • Protein: Eggs provide protein to help keep you full and support muscle repair - a great way to start the day!
    • Fiber: Whole wheat bread and mixed berries both contribute fiber, which supports healthy digestion and helps keep energy levels steady throughout the morning.
    • Antioxidants: Berries are packed with antioxidants that support overall health and help fight inflammation.
    • Naturally Sweetened: Pure maple syrup adds sweetness without relying on refined sugar, which I love for a breakfast recipe!
    • Carbohydrates: Whole wheat bread provides complex carbohydrates to fuel your brain and body, especially helpful on busy mornings.

    Ingredients You Need

Ingredients for berry French toast cups: cubed whole wheat bread, eggs, milk, frozen mixed berries, maple syrup, vanilla, cinnamon and salt.
    • Whole Wheat Bread: The base of these cups! Whole wheat bread adds fiber and structure. You want it cut into small cubes so it soaks up the custard evenly. Any sturdy whole wheat sandwich bread works great here.
    • Mixed Berries: Fresh or frozen both work. If you are using frozen berries, no need to thaw them first! Just fold them in and they will soften beautifully during baking. Blueberries, raspberries, and strawberries are all great options.
    • Eggs: These create that classic custardy French toast texture. Do not skip them!
    • Milk: Use whatever milk you have on hand. Dairy or non-dairy both work well.
    • Pure Maple Syrup: Adds natural sweetness throughout the custard. I always use pure maple syrup for the best flavor.

    Dietary Substitutions

    • Dairy-Free: Swap the milk for any non-dairy milk like oat, almond, or coconut milk!
    • Gluten-Free: Use your favorite gluten-free bread in place of the whole wheat bread. Just make sure it is a sturdy loaf so it holds up to the custard.
    • Refined Sugar-Free: This recipe is already sweetened with pure maple syrup!

How to Make Berry French Toast Cups

Whisking eggs, milk, maple syrup, vanilla and cinnamon in a glass bowl to make the custard for French toast cups.

Step 1: Preheat the oven to 350°F and grease a 12-cup muffin tin well.

Step 2: In a large bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon, and salt until smooth.

Step 3: Add the bread cubes and toss to coat. Let them sit for a few minutes so they can really soak up the custard mixture.

Frozen raspberries, blueberries and blackberries being stirred into custard-soaked whole wheat bread cubes.

Step 4: Gently fold in the berries, being careful not to crush them.

Step 5: Divide the mixture evenly among the muffin cups, pressing down gently. Spoon any leftover custard over the top of each cup.

Step 6: Bake for about 30 minutes, until the centers are set and the edges are golden.

Step 7: Let cool in the pan for a few minutes before lifting out. Serve warm with a little extra maple syrup on top!

    Dietitian Tips for Success

    • Grease the muffin tin really well. This is so important! The custard can stick to the pan if it is not properly greased. I like to use a generous spray of cooking spray or a little melted butter brushed into each cup.
    • Let the bread soak long enough. Give those bread cubes a few minutes to absorb the custard before you fold in the berries. This step is what gives you that classic soft, custardy French toast texture inside each cup.
    • Don't overfill the cups. Fill them close to the top but leave just a little room. The mixture puffs slightly as it bakes and you want room for that without overflow.
    • Use day-old bread if you have it. Slightly stale bread actually absorbs the custard even better than fresh bread. It is a great way to use up a loaf that is on its way out! My whole wheat pumpkin banana muffins follow a similar idea of using simple wholesome ingredients to create something really satisfying.
    • Balance your plate for a fuller breakfast. These cups are a great source of carbohydrates and fiber, especially with the whole wheat bread. Pair them with eggs or Greek yogurt to add protein and keep you full through the morning. I do this with my mini naan breakfast pizzas too - always better with a protein on the side!

How to Serve Berry French Toast Cups

These are incredibly versatile! Serve them warm straight from the oven with a drizzle of extra maple syrup. They are also great topped with a dollop of Greek yogurt, a handful of fresh berries, or a little powdered sugar.

For a bigger spread, pair them alongside scrambled eggs, turkey bacon, or a simple green smoothie. They work just as well as a weekend brunch treat as they do for a quick weekday breakfast. And if you are meal prepping for the week, these honestly reheat so well - just pop them in the microwave for about 30 seconds and they taste freshly baked!

    Storage Suggestions

    • Refrigerator: Store leftover berry french toast cups in an airtight container for up to 4 days. They reheat quickly and easily!
    • Freezer: Freeze in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 2 months.
    • Reheating: Microwave for about 30 seconds straight from the fridge, or reheat in the oven at 350°F for about 10 minutes if reheating from frozen.

    Frequently Asked Questions

Can I use frozen berries in french toast cups?

Yes! Frozen berries work great in this recipe. No need to thaw them first. Just fold them in frozen and they will soften and get perfectly jammy as the cups bake.

Can I make these ahead of time?

Absolutely! These are one of my favorite make-ahead breakfasts. Bake them fully, let them cool, then store in the fridge or freezer and reheat as needed throughout the week.

What kind of bread works best?

A sturdy whole wheat sandwich bread is ideal because it holds up well to the custard without falling apart. Avoid very soft or thin-sliced bread, as it can get too mushy.

Can I make these without a muffin tin?

You could bake the mixture in a greased 8x8 or 9x13 baking dish instead for more of a classic baked French toast casserole. The bake time may need to increase slightly, so keep an eye on it!
