I have a family favorite chicken enchilada casserole recipe for you at the end of this blog post. I also have some of the best side dishes to serve along with the casserole. Check them out below!
Storing
Storing chicken enchilada casserole is pretty simple. Here is an easy guide for you!
Refrigeration
If you plan to eat it within a few days, store the casserole in an airtight container and keep it in the refrigerator. This helps maintain its freshness.
Freezing
If you want to store it for a longer period, consider freezing it. Wrap the casserole tightly with plastic wrap or aluminum foil. You can also use a freezer-safe container. Label it with the date.
Thawing
When you're ready to eat it again, thaw the frozen casserole in the refrigerator overnight. This ensures even thawing and helps preserve the texture.
Reheating
Reheat the casserole in the oven for best results. Cover it with foil to prevent drying out, and warm it at 350F until it's heated through - about 25 minutes.

What You’ll Need From The Grocery Store
Ingredients
Enchilada sauce - Homemade or store-bought for a quicker recipe.
Ground chicken - I prefer to buy ground chicken or turkey in bulk if possible to save some money!
Onion - I like to use red onions just because that is my preference but you could also use white onions!
Green chilies - These chili’s add some heat!
Black beans - Typically I buy no-salt-added black beans from the grocery store.
Corn tortillas - I have been really like the taste of corn tortillas versus flour tortillas!
Mexican cheese - I buy most of my cheese from Aldi.

How to Make the Chicken Enchilada Casserole Recipe
Preheat the oven and prep the casserole dish: Preheat the oven to 350℉ and spray a 9x13 inch baking dish with cooking spray.
Brown the ground chicken: In a large skillet, brown the ground chicken and sprinkle the black pepper over the chicken.
Mix in filling ingredients: Once the chicken is cooked thoroughly, remove from the heat and add the diced onion, green chilis, black beans, and ½ cup of enchilada sauce. Mix well.
Coat dish with enchilada sauce: Pour ½ cup of the enchilada sauce on the bottom of the pan.
Dip tortillas in enchilada sauce: Add about 1 cup of the enchilada sauce in a shallow bowl. Dip 6 corn tortillas in the sauce and line the bottom of the casserole with the dipped corn tortillas.
Layer ingredients: Pour half of the chicken mixture on top of the dipped tortillas in the baking dish. Top with 1 cup of the cheese and spread evenly. Next, dip the last 6 corn tortillas in the enchilada sauce and layer on top of the chicken. Pour the rest of the chicken mixture on top. Add 2 cups of the cheese. Pour the remaining of the enchilada sauce over the casserole.
Bake: Lastly, bake uncovered for 20 minutes or until the cheese has melted and is bubbly. Enjoy!
The Best Chicken Enchilada Casserole Recipe
Ingredients
- 2 cups store-bough enchilada sauce
- 2 pounds ground chicken
- ¼ teaspoon black pepper

Variations/Substitutes
Replace ground chicken with ground turkey or shredded chicken made in the slow cooker.
Instead of corn tortillas, use flour tortillas.
Replace black beans with pinto beans.

Additions to ground chicken mixture: bell peppers or chili powder.
Use green enchilada sauce instead of red enchilada sauce.

FAQ
Absolutely! That would be a great option for protein instead of ground turkey. You could also use canned chicken as well.
Yepp! You could do 2 cans black beans (instead of 1 can) and 1 can of pinto beans in replace of the chicken.
